How detailed will my cake be?

"When I order a custom cake, how exact a copy of (blank) is it going to be?" What a great question! We've been hearing that a lot lately as we move into the Custom Cake season - what are realistic expectations for a cake to look like? The answer depends largely on the material we're trying to copy as well as the level of detail requested. Are you looking for an edible shoe or a cake that looks like a shoe? But rather than just tell you the answer, let me show you with cake!

Let's start off with a great example: an Adidas Shoe we made over a year ago. Because the shoe is meant to sit flat on the floor (as opposed to lifting up at the toe like running shoes) it was easier to replicate the shape. The leather fabric lent itself well to copying in chocolate, too. Add a few details and some faux stitching, and voila - an Edible Shoe! The finished product looked perfect - you almost can't tell which is the shoe and which is the cake!

Let's take on animals for our next example. Ah, animals - you and your detailed fur, feathers, and fins! And let's not forget the coloring. While I'm sure it's helpful in the wild for camoflauge, it's not so helpful in the bakery. But never fear, the Dessert Works Decorators are here! With a little time and a paintbrush, even something like this large-mouth bass can be copied. Close inspection of the cake shows that it's not perfect - it's definitely closer to a cake than a fish. But from a distance, even a fishing novice would know what lay on the table!

And now, sigh, the most troubling and trying of materials to reproduce: Wood. You'd be surprised how many cake requests feature it: Roulette wheels, pianos, bowling alleys, and even cigar boxes! Every type of wood is different, but they all feature very detailed lines and colors. This is very difficult to reproduce in chocolate, but not impossible. Take a look at this cigar box. The cake isn't as perfect a copy as that Adidas shoe above, but it definitely screams cigar box. We'd classify this as "a cake to look like a cigar box" as opposed to an "edible cigar box."

Hopefully this has helped to illuminate the bright world of cake decorating a bit. Remember - with time, good materials, and Dessert Works, NO cake is too crazy or too custom to make!

Add a little chocolate and we take your image and make it POP! for a little 3-D effect. Hello all you Dessert Works fans! We hope you had a sweet and relaxing Thanksgiving. Before we transition into Christmas information we wanted to share with you one of our favorite cakes to leave our bakery. Recently we had a bride order a groom's cake for her soon-to-be husband, and she requested an edible version of his dog. Making edible versions of pets happens often at Dessert Works, but we were not expecting this dog to be quite so cute. I in particular, was taken aback by how adorable he is, and any time I am feeling a bit down I look at the picture of this cutie-pie and my day brightens. The owners of my new favorite dog, were even kind enough to bring him by so we could meet in person! So take a look at Winston, the cutest dog ever!!! In the spirit of Thanksgiving and the dazzling array of good foods that it brings, this week we'd like to feature a few cakes that look too savory to be sweet!

The theme for the party was "Play Hard" complete with everything red, white and blue - the Red Sox colors! Fun Fall Treats!

September is halfway through and the bakery is filled with Fall flavors and colors. Leaves of rust, burgundy, and gold are falling over the samples trays, and boughs of sunflowers and berries adorn the windows. Fall is definitely in the air as the scent of warm Rustic Apple Tarts mixes with fresh Pear and Cranberry Galettes. This morning we debuted our new seasonal cake flavor: Caramel Apple! Our light Vanilla Chiffon Cake accented with a drizzle of fresh caramel, and paired with our creamy caramel mousse and freshly sliced apples. To quote one Dessert Works employee, "It's like autumn in your mouth!"

Florentine Ivy and Picasso Lilies

Julie and Nick's wedding reception in a Botanical Center begged for a floral/ivy/botanically-inspired wedding cake!

Frosted in our vanilla buttercream, this couple opted for Dessert Works' "Florentine Ivy" design in a soft sage green. Though ivy-inspired, this design also incorporates flourishes like a waving scroll, and dots that create even further embellishment.

On the middle tier, Dessert Works applied the same design, only much more conservatively. The stretches of smooth buttercream and open space on this tier created a nice contrast to the top and bottom tiers.

The cake was further decorated with fresh flowers in deep fuchsias and plums -- Picasso Lilies and orchids. Beautiful! The floating candles provide an air of romance, delicately accenting the cake.

Shamrocks and Hearts

Jennifer and David may have added some luck to their wedding celebration with their incorporation of our "Shamrocks and Hearts" design on their cake!

Their cake was frosted in soft, smooth vanilla buttercream, with tiers of our Shamrocks design alternating with Kristen's signature "Champagne Dot" pattern (meant to look like champagne bubbles floating up to the top of the tier).

Dessert Works kept the shoulders of the cake clean, adding a floral bouquet of white roses to the top of the cake only. And for a touch of green - the leaves on the roses provided the perfect accent.

Champagne: Chic and Elegant

Sometimes folks feel that white-on-white cakes don't pack enough punch; but they don't want to go crazy with color.

How about champagne??

Champagne is a deeper, fuller color than ivory (we wouldn't even consider it on the "white" spectrum), but it's still muted, classic, and elegant.

For this couple's wedding, we went with modern, square tiers and bamboo borders. The cake was covered in champagne-colored rolled chocolate (softening the corners of the square tiers), and then the fern design from the couple's invitations was translated into white rolled chocolate applique decorating the tiers.

Swiss Dot and Fresh Flowers!

Becky and John's wedding cake was a beautiful demonstration of how fresh flowers can transform a wedding cake!

Dessert Works decorated their cake with our sweet and simple Swiss Dot design. On the bottom tier only, we brought in the couple's blue accent color with a fabric ribbon.

Fresh hydrangea poms, blossoms, and blush pink roses provided the finishing touches to pull everything together! The fresh flowers then coordinated perfectly with the girls' bouquets, which provided additional decor to the cake table.

We loved Kendra and Mike's thoughtful idea for a truly personalized wedding cake. They decided to treat their wedding cake like a photo album, and to decorate it (literally) with memories of times shared together!

Each picture on the cake was printed in black and white as an edible image on sugar paper, then cut to size, applied on the cake, and "framed" in vanilla buttercream. On the alternating tiers, the couple opted for Dessert Works' Wallace Scroll design in white to contrast and set apart the photograph tiers.

The bride's flowers included fuchsia Gerbera Daises, which Dessert Works created in edible form from buttercream for the cake's top bouquet. Their honeymoon cake even included miniaturized versions of the pictures! For an event that is a celebration of the couple and their relationship, how much more fitting could this design be. Our best to the happy couple!

New England Fall Foliage Wedding Cake

Fall weddings in New England are in high demand - the region's autumn foliage provides a such a stunning backdrop; couples reserve fall dates far in advance to take advantage of the landscape.

With fall coming up quickly on the horizon, we thought we'd remind you of our decorators' talents in rolled chocolate. We're honestly capable of paralleling and capturing nature's beauty on your wedding cake! (**If you're unfamiliar with rolled chocolate, it's Dessert Works' preferred alternative to fondant. Check out our previous blog post on this topic for more info on this medium.)

Here's a cake from September 2010: we did a top bouquet of rolled chocolate roses, calla lilies, autumn leaves, and even a baby pumpkin for the season! We brought in a range of beautiful hues such burgundy, eggplant, deep sage, and burnt orange to evoke the feeling of autumn.

The sides of the tiers were decorated in our "Ivy with Fall Leaves" design, where both the ivy and the tiny "leaves" are piped on in our delicious vanilla buttercream.

Fresh Flowers and a Classic Wallace Scroll

Christina and Mark were married in Fall 2010 at the Four Points by Sheraton, in Norwood, where Dessert Works is the package wedding cake provider for receptions.

Their design was completely in package (i.e. no additional out-of-pocket expense to the couple!) -- it included our classic Wallace Scroll design piped in white buttercream, accented by fresh flowers and a topper of the couple's married last initial.

Quite simple, yet quite elegant at the same time - wouldn't you agree?

Stanley Cup Wedding!!

What a fun wedding!!

Bradley and Kevin made a bet back in December... if the Bruins won the playoffs, then the wedding cake would be a Stanley Cup. Flash forward to August ... :)

We started off designing a Stanley Cup "inspired" wedding cake that still had the look of a traditional, tiered cake. Ultimately though, the CUP design won out!!

This cake featured vanilla buttercream frosting and design work (a variation on Dessert Works's Wallace Scroll design), with white rolled chocolate crossed hockey sticks and detailing to create the wedding-version of the cup.

Can't wait to hear what the couple thought of the finished product!! Go Bs!!!!

What's the Story on Cake Toppers?

People often ask me: do people still use cake toppers?

YES, THEY DO!

Perhaps there was a time when cake toppers were much more mainstream (nowadays, where decorating has come such a long way, a top bouquet of either hand-made rolled-chocolate flowers or buttercream flowers is probably more common), but many folks still go with toppers.

We've seen them all: traditional bride and groom figurines, lovebirds, custom clay-casts in the likeness of the couple, a pair of Black Labradors on the top... anything goes. It's your cake!

So how does it work, if you want to use a topper?

You provide the topper. You know your style best, find something that fits your relationship and the theme of your wedding.
The topper does not stay with Dessert Works. Your cake would never travel on delivery with a topper (it's too precarious to risk) -- so your topper will be placed at the venue once the cake has arrived.
Dessert Works does need to know (a) the dimensions of your topper's base and (b) its general material. You can email us measurements, send us a link to the topper picture online, etc. If your topper is made of a heavier material (clay, ceramic, etc.) - we may dowel the top tier to ensure it is fully supported.
Should we decorate around your topper with a ring of flowers, or accent bunches of flowers? Or, should the topper be the sole focal point? We'll sort out all these questions in the process of designing your cake.

What's the cost of the cake I saw on TV??

Cake pricing can be such a mystery, how are you supposed to know what to expect? What is a realistic budget as you walk into the store to order a cake?

Part of the mystery is perpetuated by the TV shows you see on Food Network and TLC. They're so much fun to watch the cakes being created and see the drama unfold in the kitchen... but aside from that, these shows omit some really significant parts of the process: namely the time and labor and material costs that go into creating these cakes, which ultimately translate into the prices of these works of art. No wonder you don't know what to expect!

In the industry we're a bit more knowledgeable and aware about pricing that's out there. To put things in perspective for you, here are some points of reference--at Carlo's Bakery (Buddy Valastro's Cake Boss) a consultation costs $100, which includes cake samples and refreshments. This $100 is then deducted from the cake order total once you order.

Cake Boss's pricing for wedding and specialty cakes, with basic buttercream, starts at $8.00 per person. For more complex cake designs (things you've seen featured on TV or in a magazine), cost is closer to $12.00 to $18.00 per person. Adding unique design requests and creative artwork to the cake order then increases the price from there.

Duff Goldman of Ace of Cakes (Charm City Cakes) provides the following pricing: "Wedding and tiered cakes start at $7 a serving. We find that most of our clients choose designs that start at about $15 per serving. There is a 50 serving minimum on wedding and tiered cakes. Minimum price for 3D [and] sculptural cakes $1,000." Delivery is priced at $175/hr.

We want to share these things with you not to discourage, but to educate you about our industry!

Here's the good news!!: Dessert Works' 3D and sculptural cakes start at $200 (cost for a smaller 3D figurine on a standard-sized cake is even less). Our wedding cakes start at $4 or $4.50/serving. We deliver cakes for $25/hr travel time, plus $0.50/mile (round trip). Pretty reasonable, no? And these prices include the costs of producing our cakes fresh, made completely on-site, and with high quality ingredients. We aim to produce cakes that taste as good as they look - the inside matters too!

Unique and specialty designs may be subject to individual pricing, but we're able to offer competitive pricing by offering "standard" designs and commonly requested themes at rates lower than completely custom cakes would be priced at. Criss-Cross Ribbons on Square Tiers

Laura and Chris were married in late July, 2011, and Kristen and her team at Dessert Works produced this beautiful cake for them!

The cake is frosted in our signature Vanilla Buttercream frosting (see how smooth?), with thicker fabric ribbons along the base of each tier, and thick and thin strands criss-crossing along the sides.

We've seen this look on round tiers before, and think it translates beautifully to the square, slightly offset tiers! Some conservative "champagne dot" bubbles were piped on (also in buttercream), and fresh flowers were placed by the florist at the Saphire Estate in Sharon, MA to complete the look.

When is really enough time??

To be honest: it's hard to be overly precise, since different seasons and dates are busier than others. Spring and Summer everyone's hoping for a blue sky day, winter weddings are enchanting, and in New England with our beautiful fall foliage, autumn weddings are in high demand.

At Dessert Works, our availability is based our capacity (how many other weddings do we have on the docket for your desired date?) Remember: we make everything fresh, and everything is made on-site. We would never freeze a wedding cake to increase our capacity. This means two things:

You're lucky, because your cake will taste incredible! (It will literally have been made in the days leading up to your wedding). But also:
We have limited capacity! You may be surprised by this, but we're not super-human. :) There are only so many hours in a day. Because we're making everything in the days leading up, it's possible that we can completely book up for a weekend. Once we've reached capacity (which itself depends on the number of cakes, size of cakes, and intricacy of decor on the cakes booked to date) -- we have to black out the weekend.

6 months is generally a safe enough time that you won't encounter black-out weekends, but we can never say for certain.

Remember you do NOT need to have a cake design finalized in order to book Dessert Works! We can make changes to your design up until 2 weeks before the wedding. Booking us really just means your date is locked, and you can sit back and relax knowing you'll have a beautiful, delicious, fresh cake waiting to wow your guests on wedding day.

How do you cut a round cake??

We're so glad you asked! We get this question all the time. Smaller cakes (like a 6" round) are easier to handle, as you can just cut sections from the center (as you would cut a pie or a pizza).

But what to do with a larger cake? You can't cut directly from the center, otherwise you'll have quite long and thin slices, which really aren't conducive for serving. Instead: start with a concentric circle. Depending on how long you'd like each serving of cake to be, come in with your knife from the outer edge about 3" or so, and cut a circle this distance from the outer edge (effectively creating a "ring" of the outer edge). Then, cut ~1" wide slices all the way around your ring.

If your center circle is small enough, feel free to go back to the standard "wedge" cut from the center to finish serving up the cake. If your center circle is still too large, go ahead and create another concentric circle, again cut slices from the outer ring, and keep working your way until you make it to the center of the cake.

Try this technique at your next birthday, anniversary party, shower, or mitzvah -- you'll look like a true professional!

On this cake, the pig was created out of rolled chocolate applique.

Polka Dot Cupcakes

Karina and Christopher had wedding cupcakes instead of a traditional cake, but they didn't have the standard buttercream flower on top of each cupcake.

Instead, they had rolled chocolate polka dots in eggplant on top of their cupcakes. They also had an 8" cutting cake on top of the cupcake display with the song lyric, "I'm just a hunk, a hunk of burning love," written on the side.

Pink Ruffle Cascade

The Fake Cake Myth

It is a popular misconception with wedding cakes, that having a fake cake made of styrofoam (also known as a dummy cake) and *sheet cakes to feed your guests will save you money. (*As a side note, here at Dessert Works we call the concept most people are referring to as a sheet cake a back-up cake. Most people think of a sheet cake as a rectangular cake with frosting. Our back-up cakes are most often round, and are the same 3 layers of cake, 2 layers of mousse filling and authentic buttercream frosting that our tiered cakes are make of. They simply aren't decorated or put on display. They are behind-the-scenes so that you have enough cake to feed all of your guests, but no one sees them.) Today for Sundays with the Chef we're addressing the misconception of the dummy wedding cake with a big healthy dose of reality!

Is a plain, undecorated back-up cake less expensive than a tiered cake? Yes, it probably is. However, what most people do not factor in is the fact that the majority of the cost of a tiered cake is in the time spent decorating, the materials used to decorate, and the skill and experience of the person doing the decorating.

So let's imagine you have 200 guests coming to your wedding. You want a 5 tier, extravagant dummy cake plus enough cake to feed all 200 of your guests. Would that dummy cake alone be less expensive than the same cake made of real cake? Yes (but still not as much less as you might think). But now add in the back-up cakes. If you think about your total cost in terms of the time spent baking the back-up cakes, materials and ingredients (both for the edible and inedible cakes), and decorating of the dummy cake, it will end up costing you more money to have this dummy cake created in addition to the real cake to feed your guests, than it would have been to just create the wedding cake out of actual cake!

Makes sense right? More time + more materials = more cost!

If you're really on a tight budget, and can't afford that extravagant 5 tier cake that you've been dreaming of, that doesn't mean you're out of options. Instead of thinking fake cake plus back-up cakes (more materials + more time = more cost), think smaller tiered cake and back-up cakes! If you have a 3 tier cake to feed 100 people created in a smaller scale version of that 5 tier cake you're dreaming of and back-up cakes to feed your remaining 100 guests, THEN you're saving money! Think about it compared to our first scenario... There's no extra materials like styrofoam, in fact you're using less to actually decorate the cake that will be on display because it's smaller. You also need fewer back-up cakes because you've used real cake for the cake that will be on display. VIOLA!

Now, this certainly works with a scenario of 200 guests. But keep in mind that the fewer guests you have, the less money you will save by taking this route. If you have 120 guests, the difference between a 3 tier cake for 100 with a back-up cake for 20 and a tiered cake for the all 120 guests in minimal, if anything.

So there you have it - the dummy cake myth - BUSTED!

Swiss Dot

Amy and Scott were married in September and had their wedding reception at The Warren Center.

Their wedding cake was frosted in vanilla buttercream frosting, had a fabric ribbon around the bottom of the tiers, and our swiss dot design above the ribbon. The couple's monogram was also written in buttercream on the middle tier, and the cake was then finished with fresh flowers on the top and sides.

Rolled Chocolate vs Edible Image

When creating a custom cake based on a particular image or invitation, there are two different techniques we can use. Today for Sundays with the Chef, we are showing you examples of both techniques so that you can see the difference.

The first way we can go about this is to create the image by hand out of rolled chocolate. We call this technique rolled chocolate applique.

On the cake above, the scene itself is created out of buttercream. The children in Halloween costumes were then created by hand, out of rolled chocolate and the details were added by hand in buttercream.

The other way would be to use an edible image. The exact image is scanned into a machine and printed out with edible ink, on edible paper. The images are then cut out and applied to a rolled chocolate backing.

You can see on the cake above that the same background scene was created out of buttercream on the cake. The edible images were then added to the scene.

So the next time you have a specific image you want added to a cake, you know the difference between your 2 options when we tell you we can use rolled chocolate applique or an edible image.

Today's Featured Friday cake was actually a wedding cake and it has a very special story behind it! Julia & Nigel were married on October 29th. Since this was a second marriage for both of them, they decided that the wedding would be all about them. They got married on a Friday afternoon, and they shared a wedding lunch of this cake and a bottle of champagne!

You may be wondering why a bed as a wedding cake. Or maybe you have your own idea as to why...but you're probably guessing wrong. Today, we're going to let Julia explain her wedding cake to you in her own words.

"My husband and I have similar plain tastes and we are all about neutral geometrics in our interior choices. As much as we talk about getting a bright and exciting bedding we always end up with a black-grey-off-white checkerboard pattern. So we now literally have a few matching sets of bedding that look like the cake you've made...I actually sent you a picture of the very bedding set from Ikea we've been addicted to for the past 3 years... We laugh about it and yet we cannot help ourselves...

This cake is what we are all about...our love for chocolate and simplicity!

We go to bed every night, look at our ever so consistent bedding and think back to our wedding day..."

Today's Weddings Wednesday cake is actually a dummy cake. The chef often creates new display cakes when she is inspired or so that we can rotate cakes and always keep the displays looking fresh and new.

This new cake features rolled chocolate swags and bows with a hand-painted pearl finish, as well as some sparkly cake jewelry in the center of the bows!

Happy New Year!

If you haven't heard yet, we're getting a fresh new start to 2011 by MOVING! We closed our doors for the last time at our Norwood location on December 31st. We are now in the process of moving all of our equipment to our new location at 302 Providence Highway in Westwood (Lambert's Plaza).

We will be closed at our new Westwood location until everything has been moved and gets set up. We anticipate being open by the 15th, but please watch our website for our official Grand Re-Opening date! Then please stop by to check out our new store!

Today for Featured Friday, we're wishing you all a very Merry Christmas with a winter wonderland, penguin cake!

Since it's now officially winter, we thought this wedding cake was the perfect fit for this week's post.

The cake was frosted in vanilla buttercream and had our snowflake, triple dot and champagne dot designs on 3 different tiers. Some rolled chocolate branches and white chocolate shavings decorated the tiers, and a custom, rolled chocolate snow couple sat on top.

Jared's Mitzvah cake incorporated 3 different designs in the colors of his party.

The bottom tier was covered in chocolate ganache and had gold, white and burgundy rolled chocolate dots. The middle tier was frosted in vanilla buttercream and had burgundy and gold rolled chocolate diamonds. The top tier was frosted in burgundy vanilla buttercream and had brown rolled chocolate stripes, with gold shooting star coming out of the top.

Heather and Keith had a picture of a cake from a magazine that they wanted for their wedding. However, the cake in the picture would serve many more guests than they were expecting at their wedding, so we adapted the cake to a smaller size for them!

The cake had a double bottom tier and was covered in a light beige colored rolled chocolate covering. A simple double rolled chocolate band went around the bottom of each tier and the cake was finished with rolled chocolate leaves, ferns and acorns.

Meaghan celebrated her 16th birthday with this custom, Blue Man Group inspired cake!

The tiered cake itself was frosted in vanilla buttercream that faded from dark blue to a lighter blue. The drums, men and custom 16 topper were all hand-sculpted out of rolled chocolate, and then the entire cake was spattered with brightly colored buttercream.

We created Kara and Neil's wedding cake for their late September wedding reception at The Fairmont Copley Plaza. The inspiration for their wedding cake was a vintage piece of lace.

The cake was frosted in vanilla buttercream, each individual flower was hand-made out of rolled chocolate and the detail work on each flower was all done by hand in buttercream. The flowers were then hand applied and layered to create this vintage lace look.

We have a special treat for Tasty Tuesday today and it's not dessert, it's BREAD! We have had many requests for bread over the years, so it is a product we have decided to try in our retail store.

To start, we will have a Rustic French Baguette, a Sea Salt & Olive Oil Focaccia, and a Sea Salt & Rosemary Focaccia baked fresh and available on Thursday, Friday and Saturday for the time being. But since we are introducing the bread to you on a Tuesday, it will be available in the store today for this week only.

With our move to Lambert's Plaza in Westwood in January, we anticipate that bread could be a popular item and hope to expand this selection and it's availability based on feedback and demand.

For now, the large Rustic French Baguette is only $2.00...

Rachel's Bat Mitzvah celebration was held at a Chinese restaurant, so they carried that theme over to her cake!

The torah scroll, fortune cookie, chop sticks and Chinese take-out box were all hand-sculpted out of rolled chocolate. Lavender buttercream flowers and ribbons were added to the design to tie in her color scheme and the cake came out so fun!

Mackenzie had a ladybug themed 1st birthday party, and we created a custom, 2 tier cake to match the invitations to her party!

The cake was frosted in pink buttercream frosting and decorated with pink and white rolled chocolate stripes and blue rolled chocolate applique flowers. Adorable, hand-sculpted, 3D, rolled chocolate ladybugs finished the cake!

We've said it before, but an all white cake can be simply stunning when there are different textures to make the cake visually interesting. Today's Weddings Wednesday cake is a great example of that!

The bottom tier of this cake has a rolled chocolate covering that was gathered to look like fabric. The rest of the cake is covered in a rolled chocolate covering as well, and features 3 different designs done in buttercream. The second tier down features a custom monogram plaque with just a touch of gold and a bouquet of white rolled chocolate roses sits on top.

Modern Mitzvah

In September, Alli celebrated her Bat Mitzvah with this fun, modern 2 tier cake!

The bottom tier was frosted in sky blue buttercream frosting, and decorated with lavender and hot pink rolled chocolate stripes. The top tier was frosted in periwinkle buttercream frosting and decorated with sky blue and light green rolled chocolate rings and dots. The cake was then finished with some hot pink, 6 point Jewish shooting stars.

Foliage

The foliage in New England in the fall is definitely a sight to be seen! So for Weddings Wednesday today, we're showcasing some foliage of our own!

This 3 tier wedding cake was made of off-set, square tiers, and a dark chocolate brown rolled chocolate band went around the bottom of each tier. A rolled chocolate bow sat on top and rolled chocolate leaves cascaded down the cake.

This baseball cap birthday cake was a fun, recent cake that we created, representing the guest of honor's favorite team!

The cake made up the main part of the hat. It was then covered in rolled chocolate and a rolled chocolate logo and brim were added. Our talented cake artists, never missing a detail, have even added the stitching to the seams!

Tiffany and Christopher were married recently and asked us to create a wedding cake similar to a picture they liked.
Using some fabric ribbon, we created a very similar cake for them! The cake was then topped with a ring of our hand-sculpted, rolled chocolate calla lilies and their wedding cake topper.
